Backpacker's Pantry Cuban Coconut Black Beans & Rice Review:

Worked well with fish

Purchased this specifically to serve alongside trout if caught. Ended up placing pan-fried trout fillets (lemon pepper and smoked paprika seasoned) into pouch as the pouch cooked/rehydrated due to timing issues of the meal. The result was excellent as all four participants noted.

Cooked meal at 9,000+ feet with extra cook time as suggested, and some insulation around the packet to make the rehydration more effective. The mixture of the seasoned trout and this dish worked well together. Also enjoyed the rice/bean remnants separately when the trout was gone.

My only reason for ranking this a 4 rather than 5 is that I used it to as an augment to fish rather than having it as stand-alone. Therefore, I don't know how much the trout contributed to the flavor of the whole packet.

Did not have issues with unrehydrated beans or rice. If one is having these problems the issue is likely with the method of keeping the packet insulated/warm while cooking, particularly at high altitude where the boiling water temp is lower and the cook time longer.
